I like to use my electric meat grinder (a Waring Pro) for the texture it gives this dish. the recipe used in this video is:<br /> <br /> 1 - 2# block of good quality mild cheddar cheese<br /> <br /> 8 ounces pimento (I like Rolands whole pimentos, then I give them a rough cut)<br /> <br /> 1/4 C (approx) mayonnaise - just for creaminess.<br /> <br /> I also added a splash of the pimento juice while grinding.<br /> <br /> Directions:<br /> Cut the cheese into chute size pieces and give the pimento a rough cut (if you used whole). Alternate feeding the chute with cheese and pimento. I begin and end with cheese, then add just enough mayo for a creamy texture - but not overbearing. You don't want the mayo to override the flavors.<br /> <br /> Serve atop crackers or stuff celery - use your imagination. It's good on top of dry toast, too. This is excellent to serve at parties. My kids like to swipe the cheesespread and make sandwiches out of them! I wanted to repost since I will be making a series of cooking video and I wanted this one included.<br /> <br /> Mine are a little different and have a southwestern twist. Recipe follows (of course, I quadruple it for a crowd):<br /> <br /> 1 pkg refrigerated crescent rolls (8 oz)<br /> 1/2 pound bulk sausage (I like Jimmy Dean)<br /> 2 stalks green onion, chopped thinly<br /> SW spice to taste (or use chili powder)<br /> handful shredded cheddar cheese<br /> egg wash<br /> <br /> Unroll dough on lightly floured surface pressing seams and perforations together (or as best possible - a few holes looks kinda cool). Add ingredients and roll up from long side; cut into 1/2 to 1 " slices; Place cut side up in ungreased baking pan, brush on eggwash and bake at 375 degrees for 12 to 16 mins or until golden brown. Saute' on medium to low until the potatoes are crisp on the outside and fork tender on the inside, and the onion translucent, stirring often.<br /> <br /> Add corned beef and mix, add spices to taste and adjust spices if needed.<br /> <br /> Serve mounded on a plate topped wih an egg cooked to your liking. I prefer the yolk running so it will drizzle with the potatoes and onions.
